It is around this time of year that I am sick and tired of the cold weather, and start swimsuit shopping online and cooking with coconut as I dream of summer sunshine. The only bonus to that would be, I get SUPER motivated to put the cookies down and lace up my shoes for a long run. At the same time, I can only eat so many carrot sticks, so it is the perfect time of year to try out some new simple and easy healthy foods!

This healthy Pina Colada Protein Smoothie is light, refreshing, and packed with the protein you need to recover from a great workout and stay full. Packed with pineapple and coconut, this smoothie has a vibrant tropical flavor that will have you dreaming of the beach!

The coconut flavor in this smoothie comes from unsweetened coconut flakes. This is my current favorite ingredient to pay around with! I love it in smoothies, for coating chicken, and in muffins!

I also used coconut water in this smoothie, but really, you can use any liquid you like– almond milk is delicious as well! I use coconut water to keep the calorie count down.

Pineapple is also one of my favorite fruits. When I was in Fiji a few summers ago, I discovered “pineapple on a stick” for 15 cents American. Oh you betcha I ate one every time we went into the market! Pineapple is packed with many of the nutrients you will find in other fruits, but pineapple is the only known source of an enzyme called bromelain. But to be honest, my favorite benefit is that pineapples, because of their fiber and water content, help to prevent constipation and promote regularity and a healthy digestive tract.

Serves: 2 smoothies
Ingredients
  • 1 scoop vanilla whey protein
  • 1 banana
  • 1 cup frozen pineapple chunks
  • 1 4.5 oz Chobani vanilla Greek yogurt
  • ¼ cup shredded unsweetened coconut
  • 1 teaspoon chia seeds
  • ½ -1 cup coconut water (I start with ½ cup and add as needed)
  • 1 cup ice
Instructions
  1. Combine all ingredients in a blender and blend together until smooth. Add more coconut water if needed.
Notes
When I make this smoothie on a Saturday morning, I will share with my husband and serve 2 smoothies; but I also make this as 1 large smoothie for a meal.
